Chef William Kovel invites fans of whisky and pork to Catalyst for an exclusive Templeton Rye Pork Project Dinner. Served on Tuesday, September 23rd, the multi-course, snout-to-tail tasting menu is a joint effort between the Cambridge restaurant and Templeton Rye, the world class whisky distillery and pig farm. Templeton’s heritage pigs are fed on a diet that includes spent rye mash, which gives them a distinct flavor and makes them highly sought after. Along with Templeton Rye cocktails, diners can expect dishes like crispy pork rillettes with shaved fennel and apple salad, as well as sage-apple stuffed porchetta with rapini, rosemary and garlic potatoes and agro dolce peach mostardo.
