He may be better known for his savory dishes – they’ve earned him plenty of praise from the likes of the Improper Bostonian, Boston Globe and Boston Magazine – but Chuck Draghi shows his sweet side on Sweet Genius. The Erbaluce chef-owner will be making an appearance on next Thursday night’s episode, “Plane Genius”. On the show, which is hosted by Master Pastry Chef Ron Ben-Israel, four top pastry chefs compete through a trio of challenges designed to put their creativity to the test. Working with surprise ingredients and under certain time constraints, chefs must come up with desserts of chocolate, candy and cake – kind of like a Chopped for pastry chefs. According to the episode listing, Draghi was asked to incorporate an exotic fruit and a ballpark favorite; include a seriously strong British staple and draw inspiration from a silky weave; and, in the final medieval duel, transform humble and mandatory ingredients into a noble cake.
